Description

A fresh and elegant summer salad made with juicy peaches, sweet tomatoes, creamy burrata cheese, and a light balsamic dressing for a refreshing and flavorful dish.

Ingredients

  • 2 ripe peaches, sliced
  • 2 cups cherry tomatoes, halved
  • 1 ball burrata cheese
  • 2 cups arugula or mixed greens
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic glaze
  • 1 teaspoon honey
  • 1 tablespoon fresh basil, chopped
  • Salt to taste
  • Black pepper to taste
  • Optional: toasted pine nuts for crunch

Instructions

  1. Wash and slice the peaches and halve the cherry tomatoes.
  2. Arrange the arugula or mixed greens on a serving plate or large bowl.
  3. Evenly distribute the peach slices and tomatoes over the greens.
  4. Place the burrata cheese gently in the center of the salad.
  5. In a small bowl, whisk together olive oil, honey, salt, and black pepper.
  6. Drizzle the dressing evenly over the salad.
  7. Finish with balsamic glaze and chopped fresh basil.
  8. Sprinkle toasted pine nuts on top if desired and serve immediately.

Notes

  • Fresh mozzarella can be substituted if burrata is unavailable.
  • Grilled peaches add a delicious smoky flavor variation.
  • Cherry or heirloom tomatoes work best for sweetness and color.
  • Spinach can replace arugula for a milder green base.
  • Add cucumbers for extra freshness and crunch.
  • Increase the balsamic glaze for a tangier flavor profile.
  • Store leftovers in an airtight container in the refrigerator for up to 1 day.
  • Keep the burrata separate when possible to preserve its creamy texture.
  • This salad is best served chilled or at room temperature.
