Description

Juicy and flavorful chicken skewers marinated in a creamy green goddess sauce made with fresh herbs, garlic, lemon, and yogurt. These skewers are fresh, tender, lightly charred, and perfect for grilling, baking, or air frying.


Ingredients

  • 1 1/2 lbs chicken breast or chicken thighs, cut into bite-sized pieces
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1/2 cup fresh parsley
  • 1/4 cup fresh basil
  • 2 tbsp fresh chives
  • 3 garlic cloves
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Wooden or metal skewers

Instructions

  1. Cut the chicken into even bite-sized pieces.
  2. In a blender or food processor, combine Greek yogurt, mayonnaise, parsley, basil, chives, garlic, lemon juice, olive oil, salt, and black pepper until smooth.
  3. Place the chicken in a bowl and coat it evenly with the green goddess marinade.
  4. Cover and refrigerate for at least 30 minutes.
  5. Thread the marinated chicken pieces onto skewers, leaving small spaces between pieces.
  6. Preheat a grill to medium-high heat.
  7. Cook the skewers for 12 to 15 minutes, turning occasionally, until the chicken is fully cooked and lightly charred.
  8. Serve warm with extra green goddess sauce or fresh salad.
