Description
Juicy and flavorful chicken skewers marinated in a creamy green goddess sauce made with fresh herbs, garlic, lemon, and yogurt. These skewers are fresh, tender, lightly charred, and perfect for grilling, baking, or air frying.
Ingredients
- 1 1/2 lbs chicken breast or chicken thighs, cut into bite-sized pieces
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 1/2 cup fresh parsley
- 1/4 cup fresh basil
- 2 tbsp fresh chives
- 3 garlic cloves
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- Wooden or metal skewers
Instructions
- Cut the chicken into even bite-sized pieces.
- In a blender or food processor, combine Greek yogurt, mayonnaise, parsley, basil, chives, garlic, lemon juice, olive oil, salt, and black pepper until smooth.
- Place the chicken in a bowl and coat it evenly with the green goddess marinade.
- Cover and refrigerate for at least 30 minutes.
- Thread the marinated chicken pieces onto skewers, leaving small spaces between pieces.
- Preheat a grill to medium-high heat.
- Cook the skewers for 12 to 15 minutes, turning occasionally, until the chicken is fully cooked and lightly charred.
- Serve warm with extra green goddess sauce or fresh salad.
