Description

A comforting and nourishing pasta dish featuring a naturally creamy white bean sauce infused with bright lemon and savory garlic.


Ingredients

  • 12 oz pasta (spaghetti or penne)
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 cup vegetable broth
  • 1/4 cup parmesan cheese (optional)
  • 2 tbsp fresh parsley, chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Cook pasta according to package instructions. Reserve 1/2 cup pasta water, then drain.
  2. Heat olive oil in a skillet over medium heat and sauté garlic until fragrant.
  3. Add white beans and vegetable broth, then simmer for 3–5 minutes.
  4. Blend part or all of the mixture until smooth, depending on desired texture.
  5. Return the sauce to the skillet and stir in lemon juice, lemon zest, and parmesan cheese if using.
  6. Add cooked pasta and toss to combine, adding reserved pasta water as needed to loosen the sauce.
  7. Season with salt and black pepper.
  8. Garnish with fresh parsley and serve.
