Instructions

  3. Add the warm water and optional honey, mixing until a shaggy dough forms.
  4. Cover the bowl and let the dough rise at room temperature for 12 to 18 hours until doubled in size and bubbly.
  5. Transfer the dough to a lightly floured surface and gently shape it into a round loaf.
  6. Let the shaped dough rest for 30 to 45 minutes while preheating the oven to 450°F (230°C) with a Dutch oven inside.
  7. Carefully place the dough into the hot Dutch oven and cover with the lid.
  8. Bake for 30 minutes covered.
  9. Remove the lid and continue baking for 10 to 15 minutes until the crust is deep golden brown.
  10. Cool the bread completely before slicing and serving.
