Ingredients

  • 2 ripe but slightly firm mangoes, peeled and sliced into strips
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded red cabbage
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/3 cup roasted peanuts
  • 3 tbsp lime juice
  • 2 tbsp fish sauce or soy sauce
  • 1 tbsp honey or sugar
  • 2 cloves garlic, minced
  • 1 small chili, finely chopped (optional)

Instructions

  1. Peel and slice the mangoes into thin strips.
  2. Prepare the vegetables by shredding the carrots, slicing the bell pepper, shredding the cabbage, and chopping the green onions.
  3. In a small bowl, whisk together lime juice, fish sauce or soy sauce, honey or sugar, minced garlic, and chopped chili.
  4. In a large bowl, combine mango, carrots, bell pepper, cabbage, and green onions.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Add chopped cilantro and mix lightly.
  7. Top with roasted peanuts just before serving for crunch.
  8. Serve immediately while fresh and crisp.
