Description

A crisp and refreshing watermelon salad with salty feta cheese, cool cucumber, fresh mint, and a light citrus dressing perfect for warm weather meals.

Ingredients

  • 6 cups seedless watermelon, cubed
  • 1 cucumber, sliced or diced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice or lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the cubed watermelon and cucumber into a large serving bowl.
  2. Add the thinly sliced red onion and chopped fresh mint.
  3. Gently crumble the feta cheese over the salad.
  4. In a small bowl, whisk together the olive oil, lime juice or lemon juice, salt, and black pepper.
  5. Drizzle the dressing over the salad and gently toss to combine without breaking the watermelon.
  6. Chill the salad for a few minutes before serving for the best flavor and freshness.

Notes

  • Fresh block feta cheese provides the creamiest texture and best flavor.
  • Blueberries or strawberries can be added for extra sweetness and color.
  • Toasted almonds or pistachios add delicious crunch.
  • Basil can be substituted for mint for a different herbal flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • This salad is best served fresh and chilled.
