Description

Crispy and flavorful Togarashi Fries seasoned with Japanese shichimi togarashi, baked to golden perfection and served with a spicy mayo for an irresistible snack or side dish.

Ingredients

Fries

  • 3 russet potatoes, peeled
  • 2 tablespoons canola oil
  • 1 tablespoon shichimi togarashi seasoning
  • 1 teaspoon kosher salt

Optional Serving

  • Spicy mayo or other preferred condiments

Instructions

  1. Preheat Oven: Preheat your oven to 450 degrees Fahrenheit (232 degrees Celsius) to ensure a hot environment for crispy fries.
  2. Prepare Potatoes: Cut off the ends of the peeled russet potatoes and slice them into thin matchstick shapes to mimic traditional fries.
  3. Season Fries: In a bowl, toss the potato matchsticks with 2 tablespoons of canola oil, half (1/2 tablespoon) of the shichimi togarashi seasoning, and 1 teaspoon kosher salt to coat evenly.
  4. Bake Fries: Arrange the fries on a sheet pan with a rack or use a parchment-lined baking sheet. Bake for 30 to 35 minutes, turning occasionally if possible, until the fries are golden brown and crispy.
  5. Finish Seasoning: While the fries cool slightly, sprinkle them with the remaining half of the shichimi togarashi seasoning to enhance their flavor.
  6. Serve: Serve the togarashi fries warm alongside spicy mayo or your choice of dipping sauces for a delicious snack or side dish.

Notes

  • Using a rack on the baking sheet helps air circulate and results in crispier fries.
  • Adjust the amount of togarashi seasoning according to your spice tolerance.
  • Russet potatoes are ideal for baking fries due to their high starch content.
  • For extra crispiness, soak the cut fries in cold water for 30 minutes before drying and seasoning.
  • Spicy mayo can be made by mixing mayonnaise with sriracha or chili sauce.
