- 5 large eggs, beaten
- ¼ cup crumbled tortilla chips
- ½ cup shredded Monterey Jack cheese
- ¼ cup chopped fresh cilantro
For Serving
- 4 tortillas, warmed
- 1 avocado, sliced
- Lime wedges
- Homemade Salsa or Tomatillo Salsa
Instructions
- Heat vegetables: Heat the olive oil in a medium nonstick skillet over medium heat. Add the diced onion, tomatoes, jalapeño, chopped garlic, sea salt, and freshly ground black pepper. Cook for about 2 minutes, stirring occasionally, until the vegetables soften and release their flavors.
- Add eggs and chips: Pour in the beaten eggs and add the crumbled tortilla chips to the skillet. Stir continuously to scramble the eggs evenly with the vegetables and chips, ensuring a combined texture.
- Incorporate cheese and finish: Stir in the shredded Monterey Jack cheese and continue cooking just until the cheese melts and the eggs are fully cooked but still moist. Remove the skillet from heat to prevent overcooking.
