Ingredients

  • For the Chicken:
  • 1 1/2 lbs chicken breasts or chicken thighs, diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • For the Teriyaki Sauce:
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • For the Bowls:
  • 4 cups cooked white rice or brown rice
  • 1 1/2 cups pineapple chunks
  • 2 cups broccoli florets
  • 1 cup shredded carrots
  • 1 cucumber, sliced
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. In a small bowl, whisk together the soy sauce, brown sugar, honey, rice vinegar, sesame oil, cornstarch, and water to make the teriyaki sauce.
  2. Heat the olive oil in a large skillet over medium-high heat. Season the diced chicken with salt and black pepper, then cook until golden brown and fully cooked.
  3. Add the minced garlic and grated ginger to the skillet and cook for about 1 minute until fragrant.
  4. Pour the teriyaki sauce into the skillet and stir continuously until the sauce thickens and coats the chicken evenly.
  5. Steam or sauté the broccoli until tender-crisp.
  6. Assemble the bowls by dividing the cooked rice among serving bowls. Top with teriyaki chicken, pineapple chunks, broccoli, shredded carrots, and cucumber slices.
  7. Garnish with sliced green onions and sesame seeds before serving.
