Ingredients
- For the Chicken:
- 1 1/2 lbs chicken breasts or chicken thighs, diced
- 1 tablespoon olive oil

- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- For the Teriyaki Sauce:
- 1/2 cup soy sauce
- 1/4 cup brown sugar

- For the Bowls:
- 4 cups cooked white rice or brown rice
- 1 1/2 cups pineapple chunks
- 2 cups broccoli florets
- 1 cup shredded carrots
- 1 cucumber, sliced
- 2 green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- In a small bowl, whisk together the soy sauce, brown sugar, honey, rice vinegar, sesame oil, cornstarch, and water to make the teriyaki sauce.
- Heat the olive oil in a large skillet over medium-high heat. Season the diced chicken with salt and black pepper, then cook until golden brown and fully cooked.
- Add the minced garlic and grated ginger to the skillet and cook for about 1 minute until fragrant.
- Pour the teriyaki sauce into the skillet and stir continuously until the sauce thickens and coats the chicken evenly.
- Steam or sauté the broccoli until tender-crisp.
- Assemble the bowls by dividing the cooked rice among serving bowls. Top with teriyaki chicken, pineapple chunks, broccoli, shredded carrots, and cucumber slices.
- Garnish with sliced green onions and sesame seeds before serving.
