Ingredients
- 4 chicken breasts
- 1 cup fresh blackberries
- 100 g cream cheese
- 2 cloves garlic, minced
- 2 tbsp honey
- 1/2 tsp chili flakes or 1 tsp hot sauce
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- 1 tsp fresh thyme or rosemary, chopped
Instructions
- Preheat oven to 190°C (375°F).
- Carefully slice a pocket into each chicken breast without cutting all the way through.
- In a bowl, mash blackberries slightly and mix with cream cheese, garlic, honey, and chili flakes until well combined.
- Stuff each chicken breast with the blackberry mixture and secure with toothpicks if needed.
- Season the outside with salt, pepper, and herbs.
- Heat olive oil in a pan and sear chicken on both sides until golden.
- Transfer chicken to the oven and bake for 20–25 minutes until fully cooked.
- Let rest for a few minutes before serving.
Notes
- Do not overfill the chicken to prevent leaking.
- Use goat cheese instead of cream cheese for a tangier flavor.
- Thaw and drain frozen blackberries היט before using.
- Add chopped nuts for extra texture.
- Check internal temperature reaches 75°C (165°F).
