Description

Juicy chicken breasts stuffed with a creamy, sweet, and slightly spicy blackberry filling, creating a bold and elegant dish with a perfect balance of flavors.


Ingredients

  • 4 chicken breasts
  • 1 cup fresh blackberries
  • 100 g cream cheese
  • 2 cloves garlic, minced
  • 2 tbsp honey
  • 1/2 tsp chili flakes or 1 tsp hot sauce
  • 2 tbsp olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 tsp fresh thyme or rosemary, chopped

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Carefully slice a pocket into each chicken breast without cutting all the way through.
  3. In a bowl, mash blackberries slightly and mix with cream cheese, garlic, honey, and chili flakes until well combined.
  4. Stuff each chicken breast with the blackberry mixture and secure with toothpicks if needed.
  5. Season the outside with salt, pepper, and herbs.
  6. Heat olive oil in a pan and sear chicken on both sides until golden.
  7. Transfer chicken to the oven and bake for 20–25 minutes until fully cooked.
  8. Let rest for a few minutes before serving.

Notes

  • Do not overfill the chicken to prevent leaking.
  • Use goat cheese instead of cream cheese for a tangier flavor.
  • Thaw and drain frozen blackberries היט before using.
  • Add chopped nuts for extra texture.
  • Check internal temperature reaches 75°C (165°F).
