Description

Ingredients

  • 3 cups cooked rice (white, brown, or cilantro-lime rice)
  • 1 lb (450g) chicken breast or thighs, cooked and sliced
  • 2 cups corn kernels (grilled, canned, or frozen)
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream or Greek yogurt
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup cotija cheese or feta, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced (optional)
  • 1 jalapeño, sliced (optional)

Instructions

  1. Season and cook the chicken with salt, pepper, paprika, and chili powder until fully cooked, then slice into pieces.
  2. Prepare the rice and keep it warm.
  3. In a bowl, mix corn with mayonnaise, sour cream or Greek yogurt, lime juice, chili powder, salt, and pepper until well combined.
  4. Assemble bowls by adding rice as the base.
  5. Top with sliced chicken.
  6. Spoon the creamy street corn mixture over the chicken.
  7. Add crumbled cotija cheese, chopped cilantro, avocado, and jalapeño if desired.
