Ingredients

- 2 cups corn kernels (grilled, canned, or frozen)
- 1/3 cup mayonnaise
- 1/3 cup sour cream or Greek yogurt
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt, to taste
- Black pepper, to taste
- 1/2 cup cotija cheese or feta, crumbled
- 1/4 cup fresh cilantro, chopped
- 1 avocado, sliced (optional)
- 1 jalapeño, sliced (optional)
Instructions
- Season and cook the chicken with salt, pepper, paprika, and chili powder until fully cooked, then slice into pieces.
