Description

This creamy Spinach French Onion Cob Dip combines tangy French onion soup mix with rich cream cheese, sour cream, and mayonnaise, blended perfectly with spinach and served inside a crusty cob loaf. It’s an easy and flavorful party dip that needs just a few ingredients and about 3 hours to chill before serving, making it a great make-ahead appetizer for gatherings.

Dip Ingredients

  • 1 packet (40g/1.4oz) French onion soup mix powder (full salt, not low salt)
  • 250g/8 oz cream cheese (full fat)
  • 300g/10oz sour cream (full fat, or 250g/8oz tub plus top up with yogurt or extra mayo)
  • ½ cup mayonnaise (whole-egg or Kewpie)
  • 250g/8 oz frozen chopped spinach, thawed and excess water squeezed out

Serving

  • 1 cob loaf (crusty round bread, preferably sourdough, about 25cm/10oz wide)

Instructions

  1. Soften Cream Cheese: Place the cream cheese in a microwave-safe bowl. Break it into roughly 8 chunks using a wooden spoon. Microwave on high for about 30 seconds, then stir vigorously until the cream cheese is soft and smooth, similar in texture to sour cream.
  2. Mix Ingredients: Add the sour cream, mayonnaise, and French onion soup mix powder to the softened cream cheese. Stir well to combine thoroughly. Next, fold in the thawed and well-drained chopped spinach until evenly incorporated.
  3. Chill the Dip: Cover the mixture and refrigerate for at least 3 hours to allow the flavors to meld and the dip to firm up slightly.
  4. Prepare the Bread Bowl: Before serving, slice off the top of the cob loaf and hollow out the inside to create a bread bowl, leaving enough bread on the walls to hold the dip.
  5. Serve: Transfer the chilled spinach French onion dip into the hollowed cob loaf. Use the bread pieces removed from inside the loaf as dippers along with any additional veggies or crackers of choice.

Notes

  • Microwaving the cream cheese softens it and makes mixing easier.
  • Make sure to squeeze excess water from the thawed spinach to prevent a watery dip.
