Description

Ingredients

  • 2 medium sweet potatoes, sliced into rounds
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • Salt and black pepper to taste
  • 1 lime
  • 1/4 cup roasted pumpkin seeds or chopped nuts
  • 2 tablespoons chopped cilantro or parsley
  • Crumbled feta cheese, optional

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Place the sweet potato rounds in a large bowl and toss with olive oil, smoked paprika, cumin, garlic powder, chili powder, salt, and black pepper.
  3. Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
