Description

A quick and light tilapia dish simmered in a rich, slightly smoky roasted red pepper sauce, perfect for a fast and flavorful meal.


Ingredients

  • 4 tilapia fillets
  • 1 cup roasted red peppers (jarred or fresh)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté chopped onion until soft, then add minced garlic and cook for 1 minute.
  3. Blend roasted red peppers into a smooth puree and add to the skillet.
  4. Stir in paprika, salt, and black pepper, and let the sauce simmer for 5–7 minutes.
  5. Season tilapia fillets with salt, pepper, and lemon juice.
  6. Place the fillets into the sauce and spoon sauce over the top.
  7. Cover and cook for 8–10 minutes until the fish flakes easily with a fork.
  8. Garnish with fresh parsley and serve.

Notes

  • Add chili flakes for a spicy kick.
  • Stir in cream or coconut milk for a richer sauce.
  • Substitute tilapia with cod or haddock if desired.
  • Store leftovers in the refrigerator for up to 2 days.
