Ingredients
- 2 cups cooked brisket, sliced or shredded
- 1/2 cup BBQ sauce
- 4–6 slices bread or 2–3 sandwich rolls
- 2 tablespoons butter
- 1 cup cheddar or provolone cheese, sliced or shredded
- 1/2 red onion, thinly sliced
- Pickles (optional)
Instructions
- Warm the brisket in a pan with BBQ sauce until heated through and well coated.
- Butter one side of each slice of bread.
- On the unbuttered side, layer cheese, BBQ brisket, red onions, and more cheese.
- Top with another slice of bread, buttered side facing out.
- Heat a skillet over medium heat and cook the sandwich until golden and crispy, pressing gently.
- Flip and cook the other side until the cheese is fully melted.
- Remove from skillet, let cool slightly, then slice and serve.
- Add pickles if desired and enjoy warm.
