Crust
- 8 oz graham cracker crumbs
- 1/4 cup sliced nuts
Cheesecake Filling
- 16 oz cream cheese, room temperature
- 3/4 cup Greek yogurt
- 1/2 cup powdered sugar
- 1/2 tsp salt
- 1.25 oz freeze dried berries (reserve 2 tablespoons for topping)
Berry Topping
- 2 cups fresh berries
- 2 tablespoons crushed freeze dried berries (reserved from filling)
- Fresh sliced berries for garnish
Instructions
- Prepare the Crust: Place the graham crackers in a plastic bag, press out the air, seal it, and use a rolling pin to crush them into fine crumbs. Combine the crumbs with the sliced nuts and set aside.
- Crush Freeze Dried Berries: Place freeze dried berries in a plastic bag, remove air, seal, and crush with a rolling pin into crumbs. Reserve 2 tablespoons for topping.
- Make the Cheesecake Filling: In a bowl, beat the room-temperature cream cheese for 3 minutes until smooth. Add Greek yogurt and continue beating for 2 more minutes. Incorporate salt, powdered sugar, and crushed freeze dried berries, mixing thoroughly.
- Prepare Berry Mixture: In a blender or food processor, pulse fresh berries with the reserved 2 tablespoons of crushed freeze dried berries to chop and combine, keeping some texture for a chunky topping. This step is optional.
- Assemble the Cups: Divide half of the graham cracker crust mixture evenly into eight 4 oz jars or four 8 oz cups, pressing slightly to form a base. Add the berry cream cheese filling on top, followed by the berry mixture. Garnish each with a sliced fresh berry.
- Chill Before Serving: Refrigerate the assembled cups for at least 20 minutes before serving to allow flavors to meld and the filling to set.
