Description

This marinated cherry tomatoes with burrata dish is a fresh, elegant appetizer featuring juicy tomatoes tossed in a flavorful marinade and served over creamy burrata cheese for a simple yet impressive dish.

Ingredients

  • 2 cups cherry tomatoes, halved
  • 8 oz burrata cheese
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 small garlic clove, finely minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon honey (optional)
  • 1/4 cup fresh basil leaves, torn
  • Pinch of red pepper flakes (optional)
  • Toasted bread or crostini for serving (optional)

Instructions

  1. Halve the cherry tomatoes and place them in a mixing bowl.
  2. Add olive oil, balsamic vinegar, garlic, salt, black pepper, and honey if using.
  3. Toss gently and let the tomatoes marinate for 15–20 minutes.
  4. Place burrata on a serving plate and gently tear it open to expose the creamy center.
  5. Spoon marinated tomatoes and their juices over and around the burrata.
  6. Top with fresh basil leaves and red pepper flakes if desired.
  7. Serve immediately with toasted bread or crostini on the side.

Notes

  • Heirloom cherry tomatoes add extra color and sweetness.
  • Letting tomatoes marinate longer deepens the flavor.
  • Use mozzarella if burrata is unavailable, though it will be less creamy.
  • Prepare tomatoes ahead, but add burrata just before serving.
  • Best served at room temperature for maximum flavor.
