Description

Fresh and crisp lettuce wrap summer rolls filled with vegetables, herbs, noodles, and protein for a light, healthy, and refreshing meal perfect for warm weather or quick lunches.


Ingredients

  • 1 head butter lettuce or romaine lettuce
  • 1 cup cooked rice noodles
  • 1 cup carrots, julienned
  • 1 cup cucumber, julienned
  • 1 avocado, sliced
  • 1 cup purple cabbage, shredded
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1 cup cooked shrimp, chicken, or tofu
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Sesame seeds for garnish

Instructions

  1. Wash and carefully dry the lettuce leaves to keep them crisp.
  2. Cook rice noodles according to package instructions, then rinse under cold water and drain well.
  3. Prepare vegetables by slicing carrots, cucumber, avocado, and cabbage into thin strips.
  4. In a small bowl, mix lime juice, soy sauce, and sesame oil to create a light dressing.
  5. Lay out lettuce leaves and fill each one with rice noodles, vegetables, herbs, and your choice of protein.
  6. Drizzle a small amount of dressing over the fillings.
  7. Gently fold the lettuce around the filling to form a wrap.
  8. Sprinkle sesame seeds on top before serving.
