Description

A fragrant and flavorful chicken dish marinated with fresh lemongrass, garlic, and savory seasonings, then cooked until juicy and golden brown.

Ingredients

  • 1 1/2 pounds chicken thighs or chicken breasts
  • 2 stalks lemongrass, finely minced
  • 3 garlic cloves, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Trim and finely mince the tender inner part of the lemongrass.
  2. In a bowl, combine the lemongrass, garlic, soy sauce, fish sauce, brown sugar, lime juice, sesame oil, and black pepper.
  3. Coat the chicken thoroughly with the marinade and let it rest for at least 30 minutes.
  4. Heat vegetable oil in a skillet or grill pan over medium-high heat.
  5. Cook the chicken for 5 to 7 minutes per side until golden brown and fully cooked.
  6. Let the chicken rest for a few minutes before slicing.
  7. Garnish with fresh cilantro and serve with lime wedges.

Notes

  • Chicken thighs stay juicier and more flavorful, but chicken breasts also work well.
  • Use only the tender white inner section of the lemongrass stalk.
  • Add chili flakes or fresh chilies for extra heat.
  • Mix in honey for a sweeter marinade variation.
  • Outdoor grilling adds a delicious smoky flavor.
  • Store leftovers in the refrigerator for up to 4 days.
  • Add a splash of broth or water when reheating to keep the chicken juicy.
