Ingredients
- 1 1/2 pounds chicken thighs or chicken breasts
- 2 stalks lemongrass, finely minced
- 3 garlic cloves, minced
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
- 1 tablespoon vegetable oil
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Trim and finely mince the tender inner part of the lemongrass.
- In a bowl, combine the lemongrass, garlic, soy sauce, fish sauce, brown sugar, lime juice, sesame oil, and black pepper.
- Coat the chicken thoroughly with the marinade and let it rest for at least 30 minutes.
- Heat vegetable oil in a skillet or grill pan over medium-high heat.
- Cook the chicken for 5 to 7 minutes per side until golden brown and fully cooked.
- Let the chicken rest for a few minutes before slicing.
- Garnish with fresh cilantro and serve with lime wedges.

- Chicken thighs stay juicier and more flavorful, but chicken breasts also work well.
- Use only the tender white inner section of the lemongrass stalk.
