Description

A delightful twist on the classic bruschetta featuring creamy burrata cheese atop toasted baguette slices, fresh cherry tomatoes, basil, and a tangy balsamic drizzle. Perfect as an elegant appetizer or light snack.

Ingredients

Bread and Cheese

  • 1 large ball of burrata cheese
  • 1 baguette or ciabatta loaf

Tomato Topping

  • 2 cups ripe cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat and Slice Bread: Preheat your oven to 400°F (200°C). Slice the baguette or ciabatta loaf into 1/2 inch thick slices to prepare for toasting.
  2. Toast the Bread: Lightly brush each bread slice with extra virgin olive oil. Place the slices on a baking sheet and toast in the preheated oven for about 5 minutes or until golden brown and crisp.
  3. Prepare Tomato Mixture: In a medium bowl, combine the halved cherry tomatoes, chopped fresh basil leaves, 2 tablespoons of olive oil, balsamic vinegar, and season with salt and pepper to taste. Mix gently to coat all ingredients evenly.
  4. Assemble Bruschetta: Spoon the tomato mixture generously onto each toasted bread slice. Tear the burrata ball into small pieces and place atop the tomato mixture on each slice.
  5. Finish and Serve: Drizzle a little extra olive oil over the assembled bruschettas for added flavor. Serve immediately while the bread is still warm and crunchy for the best texture and taste.

Notes

  • Use fresh, ripe cherry tomatoes for the best flavor and juiciness.
  • Burrata is best served fresh and at room temperature to maximize creaminess.
  • Adjust salt and pepper according to your taste preference.
  • For a balsamic glaze variation, reduce the balsamic vinegar by simmering until thicker before drizzling.
  • This recipe is best consumed immediately to maintain bread crispness.
