Description

Fresh and flavorful lettuce wraps made with tender honey-lime chicken, seasoned cauliflower rice, and crisp lettuce leaves. This light yet satisfying meal is quick to prepare and perfect for healthy lunches or easy weeknight dinners.


Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts or chicken thighs, diced
  • 4 cups cauliflower rice
  • 8 large lettuce leaves (butter lettuce or romaine)
  • 3 tablespoons honey
  • 3 tablespoons lime juice
  • 1 teaspoon lime zest
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1/2 teaspoon chili flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 green onions, chopped
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Cut the chicken into small bite-sized pieces and place them in a mixing bowl.
  2. In a separate bowl, whisk together the honey, lime juice, lime zest, garlic, soy sauce, olive oil, chili flakes, salt, and black pepper.
  3. Pour the marinade over the chicken and toss well to coat. Let it marinate for 15 to 30 minutes.
  4. Heat a large skillet over medium-high heat and cook the chicken for 8 to 10 minutes, stirring occasionally, until fully cooked and lightly caramelized.
  5. In another skillet, heat a small amount of olive oil and sauté the cauliflower rice with a pinch of salt and pepper for 5 to 7 minutes until tender.
  6. Wash and dry the lettuce leaves carefully to keep them crisp.
  7. Fill each lettuce leaf with cauliflower rice and top with the honey-lime chicken.
  8. Garnish with chopped green onions and fresh cilantro before serving.

Notes

  • Butter lettuce and romaine lettuce work best because they hold the filling well.
  • You can add shredded carrots, cucumbers, or bell peppers for extra crunch.
  • For more heat, add sliced jalapeños or extra chili flakes.
  • Store the chicken and cauliflower rice separately from the lettuce leaves for maximum freshness.
  • The chicken and cauliflower rice can be prepared ahead of time for easy meal prep.
