Ingredients
- 1 1/2 pounds boneless skinless chicken breasts or chicken thighs, diced
- 4 cups cauliflower rice
- 8 large lettuce leaves (butter lettuce or romaine)
- 3 tablespoons honey
- 3 tablespoons lime juice
- 1 teaspoon lime zest
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1/2 teaspoon chili flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 green onions, chopped
- 1/4 cup fresh cilantro, chopped
Instructions
- Cut the chicken into small bite-sized pieces and place them in a mixing bowl.
- In a separate bowl, whisk together the honey, lime juice, lime zest, garlic, soy sauce, olive oil, chili flakes, salt, and black pepper.
- Pour the marinade over the chicken and toss well to coat. Let it marinate for 15 to 30 minutes.
- Heat a large skillet over medium-high heat and cook the chicken for 8 to 10 minutes, stirring occasionally, until fully cooked and lightly caramelized.
- In another skillet, heat a small amount of olive oil and sauté the cauliflower rice with a pinch of salt and pepper for 5 to 7 minutes until tender.
- Wash and dry the lettuce leaves carefully to keep them crisp.
- Fill each lettuce leaf with cauliflower rice and top with the honey-lime chicken.
- Garnish with chopped green onions and fresh cilantro before serving.
Notes
- Butter lettuce and romaine lettuce work best because they hold the filling well.
- You can add shredded carrots, cucumbers, or bell peppers for extra crunch.
- For more heat, add sliced jalapeños or extra chili flakes.
