Instructions

  2. Fry the Fries: Heat oil in a deep pan or fryer on high heat until boiling hot. Carefully add the potato fries to the oil and fry until they turn a golden brown color and are cooked through. This typically takes about 5-7 minutes depending on the oil temperature and potato thickness.
  3. Drain and Season Fries: Remove the fries from the hot oil using a slotted spoon or basket. Place them on a napkin or a cooling rack to drain excess oil. Immediately sprinkle them with 1/2 teaspoon salt to season.
  4. Make the Nacho Cheese Sauce: In a small saucepan, combine shredded mozzarella, shredded cheddar, milk, pepper, salt, paprika, corn starch, and chili powder (if using). Place over medium heat and cook, stirring constantly, until the cheese melts fully and the sauce becomes smooth and well-blended, about 3 minutes. Keep mixing to prevent burning or clumping.
