Ingredients

Meat Sauce

  • 1 tbsp olive oil
  • 1 lb lean ground turkey
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp tomato paste
  • 1 jar (710mL) pasta sauce, of your choice
  • 4 cups baby spinach, roughly chopped

Lasagna Layers

  • 1 box (375g) oven-ready lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated parmesan cheese, divided
  • 2 tsp dried parsley
  • 1/4 tsp salt
  • 1 large egg, beaten

Instructions

  1. Prepare the Meat Sauce: Heat olive oil in a large pan over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant. Add the ground turkey, cooking until browned and fully cooked. Stir in black pepper, Italian seasoning, and tomato paste, mixing well. Pour in the pasta sauce and simmer for 10 minutes until flavors meld. Fold in the chopped spinach and cook until just wilted.
  2. Mix the Cheese Layer: In a bowl, combine ricotta cheese, half of the shredded mozzarella, half of the grated parmesan, dried parsley, salt, and beaten egg. Stir until all ingredients are well incorporated to form a creamy cheese mixture.
  3. Assemble the Lasagna: Preheat your oven to 375°F (190°C). In a 9×13-inch baking dish, spread a thin layer of the meat sauce on the bottom. Lay a layer of oven-ready lasagna noodles over the sauce. Spread a portion of the cheese mixture evenly over the noodles, then add another layer of meat sauce. Repeat these layers, ending with a top layer of noodles covered by the remaining meat sauce. Sprinkle the remaining mozzarella and parmesan cheeses on top.
  4. Bake the Lasagna: Cover the baking dish tightly with aluminum foil to prevent drying. Bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese on top is melted and golden brown.
