Fresh and vibrant Grilled Peach Caprese Toast made with juicy grilled peaches, creamy mozzarella, ripe tomatoes, basil, and toasted sourdough finished with balsamic glaze.
Ingredients
- 2 ripe peaches, halved and sliced
- 4 slices sourdough bread
- 1 tablespoon olive oil
- 1 cup fresh mozzarella, sliced
- 1 cup cherry tomatoes, halved
- Fresh basil leaves
- 2 tablespoons balsamic glaze
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat a grill pan or outdoor grill over medium heat.
- Lightly brush the peach slices with olive oil.
- Grill the peaches for 2-3 minutes per side until grill marks appear and the peaches soften slightly.
- Toast the sourdough bread until golden and crisp.
- Layer slices of fresh mozzarella over the warm toast.
- Top with grilled peaches and halved cherry tomatoes.
- Add fresh basil leaves over the top.
- Drizzle balsamic glaze across each toast.
- Season lightly with salt and black pepper.
- Serve immediately while the toast is crisp and the peaches are warm.
Notes
- Ciabatta, baguette, or whole-grain bread can replace sourdough.
- Burrata may be used instead of mozzarella for extra creaminess.
- Add arugula or microgreens for a peppery finish.
- Nectarines or plums work well if peaches are unavailable.
- Store toppings separately from bread in the refrigerator for up to 2 days.
