Description

Fresh and vibrant Grilled Peach Caprese Toast made with juicy grilled peaches, creamy mozzarella, ripe tomatoes, basil, and toasted sourdough finished with balsamic glaze.


Ingredients

  • 2 ripe peaches, halved and sliced
  • 4 slices sourdough bread
  • 1 tablespoon olive oil
  • 1 cup fresh mozzarella, sliced
  • 1 cup cherry tomatoes, halved
  • Fresh basil leaves
  • 2 tablespoons balsamic glaze
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat a grill pan or outdoor grill over medium heat.
  2. Lightly brush the peach slices with olive oil.
  3. Grill the peaches for 2-3 minutes per side until grill marks appear and the peaches soften slightly.
  4. Toast the sourdough bread until golden and crisp.
  5. Layer slices of fresh mozzarella over the warm toast.
  6. Top with grilled peaches and halved cherry tomatoes.
  7. Add fresh basil leaves over the top.
  8. Drizzle balsamic glaze across each toast.
  9. Season lightly with salt and black pepper.
  10. Serve immediately while the toast is crisp and the peaches are warm.

  • Ciabatta, baguette, or whole-grain bread can replace sourdough.
  • Burrata may be used instead of mozzarella for extra creaminess.
