Description

A fresh and vibrant salad featuring caramelized grilled peaches, juicy blueberries, and crisp greens, balanced with a light tangy dressing and creamy cheese.


Ingredients

  • 23 fresh peaches, halved and pitted
  • 1 cup blueberries
  • 4 cups mixed greens or arugula
  • 2 tablespoons olive oil
  • 12 tablespoons balsamic vinegar or lemon juice
  • 1 teaspoon honey (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 1/3 cup goat cheese or feta cheese, crumbled
  • 1/4 cup walnuts or almonds (optional)

Instructions

  1. Lightly brush the peach halves with olive oil.
  2. Grill the peaches for 3–5 minutes per side until grill marks appear and they soften slightly.
  3. Remove from the grill, let cool slightly, then slice into wedges.
  4. In a large bowl, combine mixed greens and blueberries.
  5. Arrange grilled peach slices on top of the greens.
  6. Drizzle with olive oil and balsamic vinegar or lemon juice.
  7. Season with salt and black pepper.
  8. Add crumbled goat cheese and nuts if using.
  9. Toss gently and serve immediately.
