Description
A classic fresh strawberry pie featuring a flaky baked pie crust filled with ripe strawberries and coated in a glossy strawberry glaze. This refreshing chilled dessert is perfect for spring and summer gatherings and highlights the natural sweetness of fresh berries.
Ingredients
- 1 baked 9-inch pie crust, completely cooled
- 1 quart fresh strawberries, hulled
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 3/4 cup water
- 1 package (3 ounces) strawberry gelatin
- 1 tablespoon fresh lemon juice
- Whipped cream, for serving (optional)
Instructions
- Arrange the whole strawberries inside the cooled pie crust, placing larger berries first and filling gaps with smaller berries.
- In a saucepan, whisk together the sugar, cornstarch, and water until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear.
- Remove from the heat and stir in the strawberry gelatin and lemon juice until fully dissolved.
- Allow the glaze to cool slightly for a few minutes.
- Carefully pour the glaze evenly over the strawberries, coating them thoroughly.
- Refrigerate the pie for at least 4 hours, or until fully set.
- Slice and serve chilled with whipped cream if desired.
Notes
- Fresh strawberries provide the best texture and flavor; frozen strawberries are not recommended.
- Ensure the glaze thickens properly before pouring it over the berries to prevent a watery pie.
- The pie can be prepared a day in advance and chilled overnight.
- A graham cracker crust can be substituted for a traditional pie crust.
- Add blueberries, white chocolate drizzle, or a cream cheese layer for delicious variations.
- Store covered in the refrigerator for up to 3 days.
- Best enjoyed within the first 2 days for optimal freshness.
