Ingredients

Cookie Dough

  • 2 and 1/4 cups (281g) all-purpose flour (spooned & leveled), plus more as needed for rolling and work surface
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon lemon extract
  • optional: 2 teaspoons lemon zest

Royal Icing

  • 4 cups (480g) confectioners’ sugar, sifted
  • 3 Tablespoons meringue powder (not plain egg white powder)
  • 910 Tablespoons room-temperature water
  • gel food coloring (such as various bright colors from a food coloring set)
  • optional: sanding sugar sprinkles and star sprinkles

Instructions

  1. Make the cookie dough: Whisk together the flour, baking powder, and salt in a medium bowl and set aside. In a large bowl, beat softened butter and granulated sugar on high speed using a mixer until smooth and creamy (about 3 minutes). Add the egg, vanilla extract, lemon extract, and optional lemon zest; beat until well combined. Scrape down the bowl sides as needed.
  2. Combine dry and wet ingredients: Mix the dry ingredients into the wet using low speed until just combined. The dough will be soft; add an extra tablespoon of flour if it is too sticky for rolling.
  3. Roll out the dough: Divide dough in two equal parts. Place each on lightly floured parchment or silicone mats. Roll each portion to an even 1/4-inch thickness. Use additional flour to prevent sticking as needed.
  4. Layer and chill the dough: Lightly dust one rolled dough sheet with flour, place parchment paper on top, then the second rolled dough sheet. Cover with plastic wrap or foil and refrigerate for at least 1–2 hours or up to 2 days.
  5. Preheat oven: When ready, preheat oven to 350°F (177°C). Line baking sheets with parchment or silicone mats.
  6. Cut the cookies: Carefully remove the top dough from the refrigerator and peel it off the parchment. Use cookie cutters to cut desired shapes (e.g., flower shapes for fireworks effect or stars). Transfer cookies to prepared baking sheets.
