Description

A fresh and vibrant mango salsa made with juicy ripe mango, crisp vegetables, lime juice, and herbs. This quick no-cook recipe delivers the perfect balance of sweet, tangy, and mildly spicy flavors, making it ideal as a dip, topping, or refreshing side dish.

Ingredients

  • 2 ripe mangoes, diced
  • 1/2 red bell pepper, finely chopped
  • 1/4 red onion, finely chopped
  • 1 jalapeño or chili pepper, minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp fresh lime juice
  • 1/2 tsp salt
  • 1 tsp honey (optional)
  • 1 avocado, diced (optional)

Instructions

  1. Peel and dice the mangoes into small, even chunks.
  2. Finely chop the red bell pepper, red onion, and jalapeño if using.
  3. Add the mango, vegetables, and cilantro to a medium mixing bowl.
  4. Pour fresh lime juice over the mixture and sprinkle with salt.
  5. Add optional honey or avocado if desired.
  6. Gently toss everything together until evenly combined, being careful not to mash the mango.
  7. Taste and adjust seasoning with additional lime juice or salt if needed.
  8. Let the salsa rest for 5–10 minutes before serving so the flavors can blend.

Notes

  • Use ripe but firm mangoes for the best texture.
  • Pineapple can be added for a tropical variation.
  • Cucumber adds extra crunch and freshness.
  • Mint can replace cilantro for a different herbal flavor.
  • Adjust the jalapeño amount depending on desired spice level.
  • Store in an airtight container in the refrigerator for up to 2 days.
  • Stir before serving since the salsa may release liquid over time.
  • Best enjoyed fresh and served cold.
