Ingredients
- 40 saltine crackers
- 1 cup unsalted butter
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups cinnamon sugar, divided
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon ground cinnamon
- 1 cup whipped topping
- Nonstick cooking spray
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet or 9×13-inch pan with parchment paper. Lightly coat with nonstick cooking spray.
- Arrange the saltine crackers in a single even layer across the prepared pan.
- In a saucepan over medium heat, melt the butter and brown sugar together, stirring constantly until smooth and bubbling.
- Pour the hot toffee mixture evenly over the saltine crackers.
- Bake for 5-7 minutes until the toffee is bubbling.
- Remove the pan from the oven and immediately sprinkle half of the cinnamon sugar mixture over the hot toffee layer.
- Allow the toffee layer to cool completely.
- In a mixing bowl, beat the cream cheese, powdered sugar, cinnamon, and vanilla extract until smooth and creamy.
- Fold in the whipped topping until light and fluffy.
- Spread the creamy filling evenly over the cooled toffee layer.
- Sprinkle the remaining cinnamon sugar evenly across the top.
- Refrigerate for at least 1 hour before slicing into bars and serving.
