Description

Ingredients

  • 40 saltine crackers
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups cinnamon sugar, divided
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon ground cinnamon
  • 1 cup whipped topping
  • Nonstick cooking spray

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet or 9×13-inch pan with parchment paper. Lightly coat with nonstick cooking spray.
  2. Arrange the saltine crackers in a single even layer across the prepared pan.
  3. In a saucepan over medium heat, melt the butter and brown sugar together, stirring constantly until smooth and bubbling.
  4. Pour the hot toffee mixture evenly over the saltine crackers.
  5. Bake for 5-7 minutes until the toffee is bubbling.
  6. Remove the pan from the oven and immediately sprinkle half of the cinnamon sugar mixture over the hot toffee layer.

  9. Fold in the whipped topping until light and fluffy.
  10. Spread the creamy filling evenly over the cooled toffee layer.
  11. Sprinkle the remaining cinnamon sugar evenly across the top.
  12. Refrigerate for at least 1 hour before slicing into bars and serving.
