Ingredients
Dough Ingredients
- 1 cup warm water
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1/4 teaspoon honey
- 2 1/2 cups all-purpose flour
- 1 teaspoon kosher salt
- 1/4 cup extra-virgin olive oil
For the Christmas Tree Bread
- 1 bunch fresh sage
- 1 bunch fresh rosemary
- A few sprigs fresh thyme
- 1/4 cup fresh cranberries, halved
- Pinch of salt and pepper
For the Flowers Bread
- 3 to 4 green onions
- A few chive sprigs
- 1 shallot, peeled and thinly sliced
- 1/4 cup sliced black olives
Instructions
- Activate yeast: In a large bowl, combine the warm water, active dry yeast, and honey. Stir gently a few times and let it sit for 5 minutes to allow the yeast to activate and become frothy.
- Mix initial dough: Add 1 cup of the all-purpose flour and 1/4 cup of olive oil to the yeast mixture. Stir until the flour is fully moistened. Let this mixture rest for another 5 minutes to begin gluten development.
- Add remaining ingredients: Stir in the remaining 1 1/2 cups of flour and the kosher salt. When the dough starts to come together, transfer it to a floured surface and knead it 10 to 15 times until the dough becomes smooth and elastic.
- First rise: Place the kneaded dough into a large oiled bowl. Cover it with a towel and let it rise in a warm spot for 1 hour, or until doubled in size.
- Preheat oven: Preheat your oven to 450 degrees Fahrenheit (232 degrees Celsius) to prepare for baking.
- Prepare baking sheet: Use 2 tablespoons of olive oil to grease a rimmed 9×13-inch baking sheet or a slightly larger pan to prevent sticking.
- Shape and second rise: Transfer the risen dough to the prepared baking sheet. Press it down to fit no larger than a 9×13-inch shape. Use your fingers to create dimples all over the surface of the dough. Drizzle the remaining 2 tablespoons of olive oil on top. Let the dough rest and rise for 20 minutes until it puffs slightly.
- Decorate Christmas Tree Bread: Use fresh sage, rosemary, and thyme to arrange a Christmas tree design on one focaccia. Place halved cranberries to mimic ornaments, then sprinkle with a pinch of salt and pepper evenly over the top.
- Decorate Flowers Bread: Arrange green onions to resemble stems across the second focaccia. Add thinly sliced shallots against the green onions to form flowers. Scatter a few chive sprigs as smaller stems and fill in empty spaces with sliced black olives for a beautiful floral pattern.
- Bake: Place the decorated focaccia breads in the preheated oven and bake for approximately 20 to 25 minutes, or until the bread turns golden brown and is cooked through.
- Cool and serve: Remove from the oven and allow the focaccia to cool slightly on a wire rack before slicing and serving to preserve the crisp crust and vibrant decorations.
