Ingredients

  • 3 cups fresh watermelon (cubed)
  • 1 1/2 cups fresh strawberries (sliced)
  • 1 1/2 cups cucumbers (sliced or diced)
  • 2 tablespoons fresh mint leaves (chopped)
  • 1/3 cup feta cheese (optional, crumbled)
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice or lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cut the watermelon into bite-sized cubes and slice the strawberries and cucumbers.
  2. Add watermelon, strawberries, and cucumbers to a large mixing bowl.
  3. Finely chop fresh mint leaves and sprinkle over the mixture.
  4. If using, crumble feta cheese on top.
  5. In a small bowl, whisk together olive oil, lime or lemon juice, honey, salt, and black pepper.
  6. Pour the dressing over the salad and gently toss to combine.
  7. Let the salad sit for 5–10 minutes to allow flavors to meld.
