Ingredients
- 3 cups fresh watermelon (cubed)
- 1 1/2 cups fresh strawberries (sliced)
- 1 1/2 cups cucumbers (sliced or diced)
- 2 tablespoons fresh mint leaves (chopped)
- 1/3 cup feta cheese (optional, crumbled)
- 2 tablespoons olive oil
- 1 tablespoon lime juice or lemon juice
- 1 tablespoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cut the watermelon into bite-sized cubes and slice the strawberries and cucumbers.
- Add watermelon, strawberries, and cucumbers to a large mixing bowl.
- Finely chop fresh mint leaves and sprinkle over the mixture.
- If using, crumble feta cheese on top.
- In a small bowl, whisk together olive oil, lime or lemon juice, honey, salt, and black pepper.
- Pour the dressing over the salad and gently toss to combine.
- Let the salad sit for 5–10 minutes to allow flavors to meld.
- Toss lightly again, adjust seasoning if needed, and serve fresh.
