Ingredients
- 1 1/2 pounds chicken breasts or chicken thighs
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 4 ounces cream cheese, softened
- 1 teaspoon Italian seasoning
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes
- 1 tablespoon olive oil
- 2 cups cooked pasta or small noodles
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Place the chicken, onion, garlic, crushed tomatoes, chicken broth, and olive oil into the crock pot.
- Season with Italian seasoning, basil, oregano, salt, black pepper, and red pepper flakes.
- Cover and cook on low for 6 hours or high for 3 hours until the chicken is tender.
- Remove the chicken from the crock pot and shred it using two forks.
- Return the shredded chicken to the soup.
- Stir in the cream cheese, heavy cream, and Parmesan cheese until smooth and creamy.
- Add the cooked pasta or noodles to the soup.
- Allow the soup to warm through for 5–10 minutes.
- Garnish with fresh parsley and extra Parmesan cheese before serving.
