Ingredients

  • 4 chicken breasts or thighs
  • 2 large onions, sliced
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 tsp dried thyme or Italian seasoning

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Toss sliced onions with olive oil, salt, and pepper, then roast for 25 minutes until soft and caramelized.
  3. Season chicken with salt, pepper, and dried herbs.
  4. Heat olive oil in a large pan and sear chicken on both sides until golden brown. Remove and set aside.
  5. In the same pan, sauté garlic until fragrant.
  6. Add balsamic vinegar and let it reduce slightly.
  7. Pour in chicken broth and heavy cream, stirring to combine into a smooth sauce.
  8. Add sun-dried tomatoes and roasted onions to the sauce.
  9. Return chicken to the pan and let simmer gently until fully cooked and sauce thickens.
  10. Serve warm with sauce spooned over the chicken.

Notes

  • Use chicken thighs for juicier and more flavorful results.
  • Add mushrooms or spinach for extra texture and nutrients.
  • Substitute heavy cream with a lighter option for fewer calories.
  • Simmer sauce gently to prevent curdling.
  • Add a splash of broth or cream when reheating to maintain consistency.
