Description

Creamy and refreshing tropical popsicles made with sweet mangoes and rich coconut milk for a smooth and fruity frozen treat perfect for warm weather.


Ingredients

  • 3 cups ripe mango chunks
  • 1 can coconut milk
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lime juice
  • 1 teaspoon vanilla extract
  • Shredded coconut for garnish if desired

Instructions

  1. Add the mango chunks, coconut milk, honey or maple syrup, lime juice, and vanilla extract to a blender.
  2. Blend until the mixture becomes smooth and creamy.
  3. Taste the mixture and adjust the sweetness if needed.
  4. Pour the mixture evenly into popsicle molds.
  5. Sprinkle shredded coconut into the molds if desired for extra texture.
  6. Insert the popsicle sticks and freeze for at least 6 hours or until completely solid.
  7. Before serving, run warm water briefly over the outside of the molds to release the popsicles easily.

  • Frozen mango works perfectly and blends very smoothly.
  • Use full-fat canned coconut milk for a richer and creamier texture.
