Ingredients
- 3 cups ripe mango chunks
- 1 can coconut milk
- 2 tablespoons honey or maple syrup
- 1 tablespoon lime juice
- 1 teaspoon vanilla extract
- Shredded coconut for garnish if desired
Instructions
- Add the mango chunks, coconut milk, honey or maple syrup, lime juice, and vanilla extract to a blender.
- Blend until the mixture becomes smooth and creamy.
- Taste the mixture and adjust the sweetness if needed.
- Pour the mixture evenly into popsicle molds.
- Sprinkle shredded coconut into the molds if desired for extra texture.
- Insert the popsicle sticks and freeze for at least 6 hours or until completely solid.
- Before serving, run warm water briefly over the outside of the molds to release the popsicles easily.
