Description

Crunchy, lightly sweet coconut granola clusters with a rich tropical flavor, perfect for breakfast or snacking.


Ingredients

  • 2 cups rolled oats
  • 1 cup shredded coconut
  • 1/2 cup almonds or mixed nuts, chopped
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix rolled oats, shredded coconut, and nuts.
  3. In a small bowl, combine honey or maple syrup, melted coconut oil, brown sugar, vanilla extract, and salt.
  4. Pour the wet mixture over the dry ingredients and mix until evenly coated.
  5. Spread the mixture evenly onto the prepared baking sheet and press it down firmly.
  6. Bake for 20–25 minutes, rotating the pan halfway through.
  7. Remove from oven when golden brown and let cool completely without stirring.
  8. Once cooled, break into clusters and store.

Notes

  • Press the mixture firmly to achieve larger clusters.
  • Do not stir while cooling to allow clusters to form.
  • Add dried fruits or chocolate chips after baking and cooling.
  • Store in an airtight container for up to 2 weeks.
  • Re-crisp in the oven if granola softens.
