Description
Crunchy, lightly sweet coconut granola clusters with a rich tropical flavor, perfect for breakfast or snacking.
Ingredients
- 2 cups rolled oats
- 1 cup shredded coconut
- 1/2 cup almonds or mixed nuts, chopped
- 1/3 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a large bowl, mix rolled oats, shredded coconut, and nuts.
- In a small bowl, combine honey or maple syrup, melted coconut oil, brown sugar, vanilla extract, and salt.
- Pour the wet mixture over the dry ingredients and mix until evenly coated.
- Spread the mixture evenly onto the prepared baking sheet and press it down firmly.
- Bake for 20–25 minutes, rotating the pan halfway through.
- Remove from oven when golden brown and let cool completely without stirring.
- Once cooled, break into clusters and store.
Notes
- Press the mixture firmly to achieve larger clusters.
- Do not stir while cooling to allow clusters to form.
- Add dried fruits or chocolate chips after baking and cooling.
- Store in an airtight container for up to 2 weeks.
- Re-crisp in the oven if granola softens.
