Description

A refreshing and vibrant Citrus Berry Salad combining fresh spinach, sweet clementines, juicy blueberries, and strawberries, topped with crunchy almonds and a zesty homemade citrus dressing. Perfect as a light lunch or a healthy side dish ready in just 15 minutes.

Ingredients

Salad Ingredients

  • 5 ounces fresh baby spinach
  • 4 clementines, peeled and sectioned
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, sliced
  • 1/4 cup chopped almonds

Dressing Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Combine Salad Ingredients: In a large bowl, mix together the fresh baby spinach, peeled and sectioned clementines, fresh blueberries, sliced strawberries, and half of the chopped almonds to create the base of the salad.
  2. Prepare Dressing: In a small bowl, whisk together the extra virgin olive oil, lemon juice, honey, minced garlic, sea salt, and ground black pepper until well emulsified to form the citrus dressing.
  3. Toss Salad with Dressing: Drizzle the prepared dressing evenly over the salad mixture and gently toss to coat all ingredients with the flavorful dressing.
  4. Garnish and Serve: Sprinkle the remaining chopped almonds on top of the salad for added crunch and serve immediately to enjoy the fresh flavors at their best.

Notes

  • Use fresh and ripe berries for the best flavor and texture.
  • Feel free to substitute almonds with walnuts or pecans if preferred.
  • For a vegan option, replace honey with maple syrup or agave nectar.
  • This salad is best served fresh but can be prepped in advance and dressed just before serving to avoid sogginess.
  • Adjust the seasoning to taste, especially the salt and pepper in the dressing.
