Description

Chocolate covered strawberry brownies are rich, fudgy, and layered with fresh strawberries and silky chocolate ganache. This decadent dessert combines chewy brownies, juicy berries, and smooth chocolate for a bakery-style treat perfect for celebrations or special occasions.

Ingredients

  • 1 cup unsalted butter
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 2 cups fresh strawberries, sliced
  • 1 1/2 cups milk chocolate, chopped
  • 3/4 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Melt the butter and semi-sweet chocolate chips together in a heatproof bowl until smooth.
  3. Whisk in the granulated sugar and brown sugar until fully combined.
  4. Add the eggs and vanilla extract, mixing until the batter becomes glossy.
  5. Stir in the flour, cocoa powder, and salt until just combined.
  6. Pour the brownie batter into the prepared pan and spread evenly.
  7. Bake for 30 to 35 minutes until the edges are set and the center remains slightly fudgy.
  8. Allow the brownies to cool completely in the pan.
  9. Arrange the sliced strawberries evenly over the cooled brownies.
  10. Heat the heavy cream until hot but not boiling, then pour it over the chopped milk chocolate. Let sit for 2 minutes before stirring until smooth.
  11. Spread the chocolate ganache evenly over the strawberries.
  12. Chill the brownies for at least 30 minutes until the topping is firm.
  13. Slice into squares and serve chilled or at room temperature.

Notes

  • Dry the strawberries completely before adding them to prevent excess moisture.
  • Use dark chocolate for a richer and less sweet ganache.
  • Add chopped nuts or mini chocolate chips for extra texture.
  • A thin layer of strawberry jam beneath the berries adds extra sweetness and flavor.
  • Store brownies in the refrigerator because of the fresh fruit topping.
