Description

These Chocolate Covered Strawberries are a simple, elegant, and delicious 3-ingredient dessert that’s quick to make and perfect for any occasion. Using good quality cooking chocolate and fresh strawberries, they offer a bite-sized treat with a smooth, shiny chocolate coating that hardens just right. Customize with optional coatings like desiccated coconut, crushed nuts, or sprinkles for added texture and flavor.

Ingredients

Main Ingredients

  • 1 cup (175g) chocolate chips (baking/cooking chocolate recommended)
  • 2 tsp vegetable oil (or grapeseed oil, canola, peanut, or other neutral oil)
  • 500g / 1 lb strawberries (~25 strawberries), fresh

Optional Coatings

  • Desiccated coconut
  • Crushed nuts
  • Sprinkles
  • Other coating of choice

Instructions

  1. Prepare the tray: Line a tray with baking/parchment paper to place the coated strawberries on.
  2. Melt the chocolate: Place the chocolate chips in a microwave-safe bowl and microwave on high in 30-second bursts, stirring well between each burst until the chocolate is smooth and glossy.
  3. Add oil to chocolate: Stir in 2 teaspoons of vegetable oil into the melted chocolate to enhance shine and soften the set chocolate.
  4. Dip strawberries: Hold each strawberry by the stem or leaves, dip it into the melted chocolate, rolling to coat most of the strawberry evenly.
  5. Apply optional coatings: If using coconut, nuts, sprinkles, or other coatings, immediately dip the chocolate-coated strawberry into the coating and then place onto the lined tray.
  6. Set the chocolate: Refrigerate the tray for 30 minutes or until the chocolate coating is firm and set.
  7. Serve: These are best served within 12 hours of making for optimal freshness and texture.

Notes

  • Use actual cooking or baking chocolate as eating chocolate does not melt smoothly.
  • The small addition of oil makes the chocolate shinier and sets with a softer bite so it doesn’t shatter when biting.
  • Quantity of strawberries is about 500g or 1 lb, roughly 25 medium-sized strawberries.
  • After 12 hours, strawberries may start to become juicy and sweat; best enjoyed the day they are made.
  • Can customize with white, milk, or dark chocolate as preferred.
