A warm and crispy chicken and avocado panini filled with juicy chicken, creamy avocado, melted cheese, and fresh vegetables for a satisfying and flavorful meal.
Ingredients
- 2 chicken breasts
- 1 ripe avocado
- 2 ciabatta rolls or panini bread
- 2 tablespoons olive oil or butter
- Salt, to taste
- Black pepper, to taste
- 4 slices cheese (mozzarella, provolone, or cheddar)
- 1 tomato, sliced
- 1 cup fresh spinach or arugula
Instructions
- Season the chicken breasts with salt and black pepper.
- Grill or pan-cook the chicken over medium heat until fully cooked and golden, about 6–7 minutes per side. Let rest, then slice thinly.
- Slice or mash the avocado and lightly season with salt and pepper. Optionally add a little lemon juice.
- Slice the bread and brush the insides with olive oil or butter.
- Assemble the sandwich by layering chicken, avocado, cheese, tomato slices, and greens onto the bread.
- Place the sandwich in a panini press or a hot pan. Press gently and cook until the bread is golden and crispy and the cheese is melted.
- Remove from heat, slice, and serve warm.

- Add pesto or garlic mayo for extra flavor.
- Include crispy bacon or grilled onions for a richer variation.
- Add jalapeños or chili sauce for a spicy kick.
