Description

This Burrata Crostini recipe features toasted baguette slices topped with creamy burrata cheese and roasted cherry tomatoes infused with garlic and olive oil. Perfect as an elegant appetizer or light snack, these crostini deliver a delightful balance of creamy cheese, sweet roasted tomatoes, and fresh basil.


Ingredients

For the Roasted Tomatoes

  • 2 cups cherry tomatoes
  • 5 garlic cloves, chopped
  • 1/2 cup olive oil
  • 1 tsp salt (adjust to taste)

For the Crostini

  • 12 slices baguette, cut on the diagonal
  • Additional olive oil for brushing
  • 8 oz burrata
  • Fresh basil leaves, for garnish

Instructions

  1. Season Tomatoes & Bake: In a baking dish, combine the cherry tomatoes, chopped garlic, 1/2 cup olive oil, and salt. Toss well to coat. Bake in a preheated oven at 400°F (200°C) for 15–20 minutes, until the tomatoes are blistered, softened, and juicy.
  2. Toast Baguette Slices: Brush both sides of the baguette slices with olive oil. Heat a skillet or grill over medium heat, then toast the baguette slices until they are golden brown and slightly charred on both sides, about 2-3 minutes per side.
  3. Spread Burrata: Tear open the burrata balls and spread the creamy cheese generously over each toasted baguette slice.
  4. Add Tomatoes and Garnish: Spoon the roasted garlic tomatoes on top of the burrata spread. Finish by garnishing each crostini with fresh basil leaves for a burst of aroma and color.
