Ingredients
- 12 oz bow tie pasta
- 8 oz mushrooms, sliced
- 4 cups fresh spinach
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 garlic cloves, minced
- 1 small onion, diced
- 1 cup heavy cream
- 3/4 cup parmesan cheese, grated
- 1/2 cup vegetable broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 2 tablespoons fresh parsley, chopped
Instructions
- Cook the bow tie pasta according to package instructions until al dente.
- Reserve 1/2 cup of pasta water before draining the pasta.
- Heat olive oil and butter in a large skillet over medium heat.
- Add the diced onion and sliced mushrooms, cooking for 6 to 8 minutes until the mushrooms are tender and golden brown.
- Stir in the garlic and cook for 1 minute until fragrant.
- Pour in the vegetable broth and heavy cream, stirring until combined.
- Add parmesan cheese, Italian seasoning, salt, black pepper, and red pepper flakes.
- Mix in the fresh spinach and cook until wilted.
- Add the cooked pasta to the skillet and toss until evenly coated in the sauce.
- If needed, stir in reserved pasta water a little at a time to loosen the sauce.
- Garnish with fresh parsley and extra parmesan cheese before serving.
Notes
- Frozen spinach can be used if thawed and drained well.
- Cremini, white button, or baby bella mushrooms all work well in this recipe.
- Use half-and-half instead of heavy cream for a lighter sauce.
- Sun-dried tomatoes or peas make excellent additions for extra flavor.
