Ingredients

  • 3 medium beets
  • 2 apples, thinly sliced
  • 5 cups mixed greens
  • 1/2 cup goat cheese, crumbled
  • 1/2 cup walnuts or pecans, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Roast or boil the beets until tender.
  2. Allow the beets to cool, then peel and slice them into bite-sized pieces.
  3. Thinly slice the apples and prepare the mixed greens.
