Description
Deliciously moist banana caramel upside down muffins topped with a rich caramelized banana layer, perfect for breakfast or a sweet dessert treat.
Ingredients
Caramel Topping
- 1/2 cup unsalted butter (melted)
- 1 cup brown sugar (packed)
Muffin Batter
- 3 ripe bananas (mashed)
- 1/2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners to prepare for baking.
- Prepare Caramel Mixture: In a small saucepan, melt the butter over low heat. Stir in the brown sugar until fully dissolved and smooth, creating a rich caramel sauce.
- Distribute Caramel: Evenly spoon the caramel mixture into the bottom of each muffin cup in the prepared muffin tin to form the upside-down topping.
- Mix Wet Ingredients: In a large bowl, combine the mashed ripe bananas, granulated sugar, eggs, and vanilla extract. Mix thoroughly until all components are well incorporated.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt to ensure even distribution.
- Make the Batter: Gradually add the dry ingredients into the banana mixture, stirring gently until just combined to avoid overmixing and tough muffins.
- Add Nuts (Optional): Fold in the chopped nuts or chocolate chips carefully, if using, to maintain batter consistency.
- Fill Muffin Cups: Pour the prepared batter over the caramel layer in the muffin cups, filling each about two-thirds full to allow for rising during baking.
- Bake Muffins: Bake the muffins in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean, indicating they are fully cooked.
- Cool and Invert: Let the muffins cool in the pan for 5 minutes, then carefully invert each muffin onto a cooling rack to reveal the caramelized banana topping. Serve warm for best flavor.
Notes
- You can substitute nuts with chocolate chips or omit them for a nut-free version.
- Use ripe bananas for the best natural sweetness and moisture.
- Ensure not to overmix the batter to keep the muffins light and fluffy.
- Serve warm to enjoy the gooey caramel topping at its best.
- Store leftovers in an airtight container at room temperature for up to 2 days.
