Description

This Baked Yogurt recipe combines creamy Greek yogurt with eggs, maple syrup, and fresh berries to create a deliciously smooth and lightly sweetened dessert or breakfast dish. Baked to perfection until set and slightly firm, it offers a delightful balance of tangy yogurt and natural sweetness, perfect for a nutritious treat.

Ingredients

Main Ingredients

  • 2 cups Greek yogurt
  • 4 large eggs
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 3 tablespoons cornstarch
  • 1 1/2 cups berries, divided (such as blueberries, raspberries, or strawberries)

Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 350 degrees F (175 degrees C). Line an 8×8 inch square baking dish with parchment paper, setting it aside to prepare your batter.
  2. Mix Wet Ingredients: In a large bowl, whisk together the Greek yogurt, eggs, maple syrup (or honey), and vanilla extract until the mixture becomes smooth and well combined.
  3. Add Cornstarch and Berries: Sprinkle in the cornstarch and whisk again thoroughly to incorporate it without lumps. Gently fold in 1 cup of the berries to the mixture with a few light stirs to distribute them evenly.
  4. Assemble in Baking Dish: Pour the yogurt mixture into the prepared baking dish, spreading it out evenly. Sprinkle the remaining 1/2 cup berries evenly on top of the batter for a decorative and flavorful finish.
  5. Bake: Place the baking dish in the preheated oven and bake for about 45 minutes, or until the center of the yogurt is set and no longer jiggly when gently shaken.
  6. Cool and Serve: Remove the baked yogurt from the oven and allow it to cool almost completely before slicing. Cut into 9 squares and serve as is or with additional maple syrup for extra sweetness.

Notes

  • You can substitute maple syrup with honey or agave syrup if preferred.
  • Choose fresh or frozen berries according to availability; if using frozen, thaw and drain excess water before adding.
  • The cornstarch helps set the yogurt so it holds the baked shape.
  • For a dairy-free version, use a plant-based Greek-style yogurt, although texture may vary.
  • Letting it cool completely before slicing ensures cleaner cuts and better texture.
