Ingredients
Main Ingredients
- 2 cups Greek yogurt
- 4 large eggs
- 1/4 cup maple syrup (or honey)
- 1 teaspoon vanilla extract
- 3 tablespoons cornstarch
- 1 1/2 cups berries, divided (such as blueberries, raspberries, or strawberries)
Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 350 degrees F (175 degrees C). Line an 8×8 inch square baking dish with parchment paper, setting it aside to prepare your batter.
- Mix Wet Ingredients: In a large bowl, whisk together the Greek yogurt, eggs, maple syrup (or honey), and vanilla extract until the mixture becomes smooth and well combined.
- Add Cornstarch and Berries: Sprinkle in the cornstarch and whisk again thoroughly to incorporate it without lumps. Gently fold in 1 cup of the berries to the mixture with a few light stirs to distribute them evenly.
- Assemble in Baking Dish: Pour the yogurt mixture into the prepared baking dish, spreading it out evenly. Sprinkle the remaining 1/2 cup berries evenly on top of the batter for a decorative and flavorful finish.
- Bake: Place the baking dish in the preheated oven and bake for about 45 minutes, or until the center of the yogurt is set and no longer jiggly when gently shaken.
- Cool and Serve: Remove the baked yogurt from the oven and allow it to cool almost completely before slicing. Cut into 9 squares and serve as is or with additional maple syrup for extra sweetness.
Notes
- You can substitute maple syrup with honey or agave syrup if preferred.
- Choose fresh or frozen berries according to availability; if using frozen, thaw and drain excess water before adding.
- The cornstarch helps set the yogurt so it holds the baked shape.
- For a dairy-free version, use a plant-based Greek-style yogurt, although texture may vary.
- Letting it cool completely before slicing ensures cleaner cuts and better texture.
