Ingredients
- 12 ounces rotini or bowtie pasta
- 1 can (14 ounces) artichoke hearts, drained and quartered
- 2 cups corn kernels, fresh, frozen and thawed, or canned and drained
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely diced
- 1/2 cup fresh basil leaves, chopped
- 1/3 cup grated Parmesan cheese
- 1/4 cup extra-virgin olive oil
- 2 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Cook the pasta according to package instructions until al dente.
- Drain the pasta and rinse under cold water to stop the cooking process.
- Place the cooled pasta in a large mixing bowl.
- Add the artichoke hearts, corn, cherry tomatoes, red onion, and chopped basil.
- In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, salt, and black pepper.
- Pour the dressing over the pasta mixture and toss until evenly coated.
- Stir in the grated Parmesan cheese.
- Refrigerate for at least 30 minutes to allow the flavors to blend.
- Toss again before serving and serve chilled.
