Ingredients
- 2 cups fresh strawberries (sliced)
- 2 cups cucumbers (thinly sliced)
- 1/4 red onion (thinly sliced)
- 2 tablespoons fresh mint leaves (chopped)
- 1/3 cup feta cheese (optional, crumbled)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash and slice the strawberries and cucumbers, then thinly slice the red onion.
- Add strawberries, cucumbers, and red onion to a large mixing bowl.
- Chop fresh mint leaves and add them to the bowl.
- If using, crumble feta cheese into the mixture.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
- Pour the dressing over the salad and gently toss to combine.
- Let the salad sit for 5–10 minutes to allow flavors to meld.
- Toss lightly again and serve fresh.
Notes
- For less watery salad, lightly salt cucumbers and pat dry before mixing.
- Add dressing just before serving for best texture.
- Use English cucumbers for fewer seeds and better crunch.
- Swap mint with basil for a different flavor profile.
- Add nuts like almonds or walnuts for extra crunch.
