Description

A light, crisp, and refreshing strawberry cucumber salad combining juicy sweetness and cool crunch, tossed in a simple citrus dressing—perfect for warm days or a quick side dish.

Ingredients

  • 2 cups fresh strawberries (sliced)
  • 2 cups cucumbers (thinly sliced)
  • 1/4 red onion (thinly sliced)
  • 2 tablespoons fresh mint leaves (chopped)
  • 1/3 cup feta cheese (optional, crumbled)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and slice the strawberries and cucumbers, then thinly slice the red onion.
  2. Add strawberries, cucumbers, and red onion to a large mixing bowl.
  3. Chop fresh mint leaves and add them to the bowl.
  4. If using, crumble feta cheese into the mixture.
  5. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
  6. Pour the dressing over the salad and gently toss to combine.
  7. Let the salad sit for 5–10 minutes to allow flavors to meld.
  8. Toss lightly again and serve fresh.

Notes

  • For less watery salad, lightly salt cucumbers and pat dry before mixing.
  • Add dressing just before serving for best texture.
  • Use English cucumbers for fewer seeds and better crunch.
  • Swap mint with basil for a different flavor profile.
  • Add nuts like almonds or walnuts for extra crunch.
