Description

Zesty Butter Beans are a quick and flavorful side dish made with creamy lima beans, garlic, lemon, and herbs. Perfectly seasoned and packed with bright, bold flavor, they pair beautifully with a wide range of meals.


Ingredients

  • 2 cans butter beans (lima beans), drained and rinsed
  • 2 tbsp olive oil or butter
  • 2 cloves garlic, minced
  • 1/2 tsp lemon zest
  • 2 tbsp lemon juice
  • 1/4 tsp crushed red pepper flakes (optional)
  • 2 tbsp fresh herbs (parsley, thyme, or dill), chopped
  • Salt and black pepper to taste
  • Optional additions:
  • 1/4 cup chopped onions or shallots
  • 1/2 cup halved cherry tomatoes
  • 2 tbsp grated Parmesan
  • 2 tbsp white wine or vegetable broth

Instructions

  1. Heat olive oil in a skillet over medium heat. Add garlic (and onions, if using) and sauté until fragrant, about 2–3 minutes.
  2. Add the butter beans to the skillet, stirring to coat them in the garlic oil.
  3. Season with salt, black pepper, lemon zest, lemon juice, and crushed red pepper flakes if using.
  4. Add optional ingredients like cherry tomatoes or broth if desired. Simmer for 5–10 minutes, stirring occasionally.
  5. Stir in fresh herbs and adjust seasoning to taste. Optionally finish with a drizzle of olive oil or sprinkle of Parmesan before serving.
