Zesty Butter Beans are a quick and flavorful side dish made with creamy lima beans, garlic, lemon, and herbs. Perfectly seasoned and packed with bright, bold flavor, they pair beautifully with a wide range of meals.
Ingredients
- 2 cans butter beans (lima beans), drained and rinsed
- 2 tbsp olive oil or butter
- 2 cloves garlic, minced
- 1/2 tsp lemon zest
- 2 tbsp lemon juice
- 1/4 tsp crushed red pepper flakes (optional)
- 2 tbsp fresh herbs (parsley, thyme, or dill), chopped
- Salt and black pepper to taste
- Optional additions:
- 1/4 cup chopped onions or shallots
- 1/2 cup halved cherry tomatoes
- 2 tbsp grated Parmesan
- 2 tbsp white wine or vegetable broth
Instructions
- Heat olive oil in a skillet over medium heat. Add garlic (and onions, if using) and sauté until fragrant, about 2–3 minutes.
- Add the butter beans to the skillet, stirring to coat them in the garlic oil.
- Season with salt, black pepper, lemon zest, lemon juice, and crushed red pepper flakes if using.
- Add optional ingredients like cherry tomatoes or broth if desired. Simmer for 5–10 minutes, stirring occasionally.
- Stir in fresh herbs and adjust seasoning to taste. Optionally finish with a drizzle of olive oil or sprinkle of Parmesan before serving.

- Use cooked dried beans for extra texture and depth of flavor.
- Mash some beans for a creamier consistency.
- Try olives and feta for a Mediterranean twist.
