Description

A refreshing and colorful salad made with fluffy quinoa, juicy watermelon, crisp vegetables, and fresh herbs, tossed in a light lime dressing. This vibrant dish is sweet, savory, and perfect for warm weather meals or meal prep.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 3 cups seedless watermelon, cubed
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 cup feta cheese, crumbled

For the dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a medium saucepan, combine rinsed quinoa and water or vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until tender and liquid is absorbed.
  2. Remove from heat, fluff with a fork, and allow the quinoa to cool completely.
  3. In a large bowl, combine the cooled quinoa, cubed watermelon, diced cucumber, red onion, chopped mint, and crumbled feta cheese.
  4. In a small bowl, whisk together olive oil, fresh lime juice, honey, salt, and black pepper.
  5. Pour the dressing over the salad and gently toss until well combined.
  6. Chill for at least 30 minutes before serving to allow the flavors to blend.
