Ingredients
- 1 lb boneless, skinless chicken breasts or thighs, thinly sliced
- 1 tbsp olive oil or butter
- 1 bell pepper (any color), thinly sliced
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tsp Italian seasoning or paprika (optional)
- 6–8 slices provolone cheese or 1 cup shredded mozzarella
- 3–4 hoagie rolls or sandwich buns, toasted
- Optional: mayonnaise, mustard, or hot sauce for spreading
Instructions
- Season chicken slices with salt, pepper, and Italian seasoning or paprika.
- Heat half the oil in a skillet over medium-high heat. Sauté peppers and onions until soft and caramelized, then set aside.
- Add remaining oil to the skillet and cook chicken until golden and cooked through, about 5–7 minutes.
- Stir in minced garlic and cook for 1 more minute.
- Return peppers and onions to the pan and mix well.
- Reduce heat and layer cheese over the chicken mixture. Cover and let cheese melt.
- Toast hoagie rolls lightly, then spread with optional mayo, mustard, or hot sauce.
- Spoon cheesy chicken mixture into the rolls, press gently, and serve hot.
