Description

These Turkey Cranberry Pinwheels are a quick, festive, and flavorful appetizer or lunch option made with soft tortillas, creamy cranberry spread, turkey slices, and fresh spinach. Perfect for holidays, parties, or meal prep, they’re easy to assemble and always a hit.

Ingredients

  • 2 large (10-inch) soft flour tortillas
  • 8 oz sliced deli turkey
  • 4 oz cream cheese, softened
  • 1/3 cup whole berry cranberry sauce or cranberry relish
  • 1 cup fresh baby spinach or arugula
  • Salt and black pepper to taste (optional)
  • Optional: 2 tablespoons chopped walnuts or pecans
  • Optional: 1 teaspoon Dijon mustard

Instructions

  1. In a bowl, mix softened cream cheese with cranberry sauce until smooth and spreadable. Add Dijon mustard if using.
  2. Lay out each tortilla and spread a generous layer of the cranberry-cream cheese mixture evenly over the surface.
  3. Layer sliced turkey over the spread, followed by a handful of baby spinach or arugula.
  4. Sprinkle with chopped nuts if desired, and season lightly with salt and pepper.
  5. Roll each tortilla tightly from one end to the other.
  6. Wrap the rolls in plastic wrap and refrigerate for at least 30 minutes to firm up.
  7. Unwrap and slice each roll into 1-inch pinwheels.
  8. Arrange on a serving platter and serve chilled or at room temperature.

Notes

  • Use spinach or tomato-flavored wraps for added color and flavor.
  • Substitute deli turkey with leftover roast turkey for a more rustic version.
  • Slice just before serving to keep pinwheel edges fresh.
  • Not recommended for freezing due to texture changes.
